    100g/31/2 oz butter
    80g/3 oz molasses sugar
    1 tablespoon golden syrup
    75 ml/2.5 fl. oz full fat milk
    1 large organic egg
    150g/51/2 oz self-raising flour
    2 tablespoons stem ginger in syrup, finely chopped

    Recipe



    Preheat the oven to 180°C/350°F/gas 4.

    Melt the butter, sugar and golden syrup in a pan over a low heat and then set to one side to cool.

    Mix together the milk and egg, add the cooled butter mixture and stir in the flour and the stem ginger.

    Pour the cake mixture into the mould and bake for 35-40 minutes until risen golden.

    Then remove from oven, and leave to cool in the mould for about 10 minutes before turning out.
