Tony's Famous Banana Cake

Banana Cake
3 x very ripe medium bananas
1 cup demerara sugar, loosely packed (250 ml)
2 x eggs
3/4 cup grapeseed oil (175 ml)
1 1/2 cup all purpose flour (375 ml)
1 tsp baking powder (5 ml)
1/2 tsp baking soda (2 ml)
1/2 tsp salt (2 ml)
1 tbsp ground cinnamon (15 ml)
Freshly grated nutmeg, to taste
1 cup coarsely chopped walnuts (250 ml)
Spiced Rum Creme Anglais
4 large egg yolks
3 tbsp white granulated sugar or brown sugar (45 ml)
1 cup homogenized milk, cold (250 ml)
1/2 vanilla bean, scraped
1 tbsp spiced rum (15 ml)

Banana Cake
Preheat oven to 350 degrees F.
In a large bowl, mash bananas with a hand held potato masher, leaving them chunky. Add the demerara, eggs and grapeseed oil. Continue to mash and stir with the potato masher until ingredients are blended.
Sift dry ingredients onto a piece of parchment paper and pour into banana mixture. Using the potato masher blend gently until flour is worked through. Stir in the walnuts.
Pour into 9-inch cake pan lined with parchment paper. Bake 35 to 40 minutes, until golden and tester comes out clean. Let cool in the pan for 30 minutes. Flip on and wire rack and cool completely. Serve with Spiced Rum Crème Anglais.
Spiced Rum Creme Anglais
Whisk yolks in a small bowl until smooth and pale.
In a small saucepan, combine milk, sugar and vanilla bean. Stir over medium heat. Remove from heat just before milk starts to boil. While whisking, slowly pour hot milk into yolks. Pour mixture back into saucepan. Cook over low heat, continually stirring with a wooden spoon. Cook until mixture thickens and coats the back of a spoon. Strain. Let cool completely. Add the rum. Refrigerate until ready to use. Serve with Tony’s Famous Banana Cake.
