    These crumbly fruit cakes are always popular with children - they are very easy to make too, so get the children to give you a hand making them.



    List of Ingredients




    225g/8oz self-raising flour
    2tsp baking powder
    110g/4oz soft margarine
    55g/2oz sugar
    110g/4oz mixed dried fruit
    55g/2oz currants
    1 egg
    1-3 tbsp milk
    demerara sugar, for sprinkling
    oil for greasing


    Recipe



    1. Preheat the oven to 200C/400F/Gas 6. Lightly grease two baking sheets.
    2. Place the flour and baking powder in a large bowl, add the margarine and rub in with the fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar and fruit. Add the egg and 1 tbsp milk and mix to a stiff mixture. If dry, add a little more milk. Using 2 tsps, shape the mixture into about 12 rough mounds on the prepared baking sheets. Sprinkle generously with demerara sugar.
    3. Bake in the preheated oven for about 15 minutes or until pale golden brown at the edges. Cool on a wire rack.
