2 eggs
½ cup sugar
¼ cup skim milk
60g reduced fat butter, melted
3 tsp vanilla essence
1 cup self-raising flour, sifted
1½ tbs cornflour
1 large green apple, peeled, cored and sliced
1 tsp cinnamon
1 tsp sugar
Recipe
Preheat oven to 200°C. Spray a 20cm cake tin with cooking spray.
Beat the eggs and sugar and light and fluffy. Stir in the milk, butter and vanilla.
Fold in the combined flours. Pour the mixture into the prepared tin.
Arrange the apple slices on top of the cake and sprinkle with the combined cinnamon and sugar. Bake in the oven for about 30-35 minutes or until skewer comes out clean when inserted.
