Baked Enchilada Casserole

List of Ingredients
13 X 9 glass baking dish
2 lbs ground meat (lean) scrambled
1 lg can black olives- chopped
1/4 small red onion- chopped
2 small or 1 large can vegitarian refried beans
4-6 flour tortillas
1 C grated sharp cheddar
Mild enchilada sauce (15 oz)Recipe
small amount of sauce bottom of pan
lay 1 layer (1 1/2) tortillas on sauce
layer of meat, refried beans, onion
Some enchilada sauce
second layer of tortillas
layer of meat, refried beans, olive
third layer flour tortillas
layer sauce
top with cheese. Cover with Foil. Cook at 350 for about 25-40 minutes or until cheese and rest of casserole is bubbly. Let stand 2 min before cutting to serve.
Notes:
THIS IS A MILD TASTING CASSEROLE. NOT AS STRONG AS ENCHILADAS MADE THE USUAL WAY. If your family likes stronger sauce, use the mediumstyle. If they don't like enchilada sauce very much, use 3/4 enchilada sauce and 1/4 tomatoe sauce. BUT, better with the enchilada sauce. Any sauce left over, serve hot at table.
