Apple Raisin Cinnamon Oatmeal Cookies

1 1/2 - cups all purpose flour, sifted
1 – teaspoon baking power
1/2 - teaspoon baking soda
1/8 – teaspoon salt
3/4 - cup butter, softened
1 – cup light brown sugar, packed
1 – egg
1 – tablespoon apple juice
1/2 - teaspoon pure vanilla extract
1 1/2 - cups quick oats
1 2/3 – cups cinnamon chips
1 – cup apple, chopped and peeled
1/2 - cup raisins.
Recipe
preheat my oven to 350° F.
In a mixing bowl, I sift together the flour, baking powder, baking soda, and salt.
In my electric mixer, I add the butter, brown sugar, egg, apple juice, and vanilla. I beat at medium speed until mixture becomes creamy.
I add in the flour mixture and continue to beat until well mixed.
Next, I add in the oats.
Then I add in the cinnamon chips, apple and raisins. I continue to mix until ingredients are well mixed.
With a teaspoon, I drop dough onto a ungreased cookie sheets. I space the dough 2 inches apart.
Now, I pop the cookies into the oven and bake 10 minutes or until the edges are lightly browned.
I remove cookies from the oven and allow cooling for 1 minute before removing from cookie sheet. I place the cookies on a wire rack to completely cool.
Makes about 4 dozen.
