    150g butter
    1 cup (220g) caster sugar
    2 eggs, beaten lightly
    1 teaspoon bicarbonate soda
    1/4 cup (60ml) hot water
    1 1/2 cups (250g) dates, chopped coarsely
    1 1/2 cups (250g) raisins, halved
    1 2/3 cups (250g) plain flour
    1 teaspoon ground cinnamon
    125g walnuts, chopped

    Preheat the oven to moderately hot (200'C).
    Beat the butter and sugar in a small bowl with an electric mixer until well combined. Add the eggs, one at a time, beat until just combined. Transfer the mixture to a large bowl.
    Dissolve the soda in the hot water, add to the combined dates and raisins. Stir the date mixture into the egg mixture then stir in the sifted dry ingredients and walnuts.
    Drop level tablespoons of mixture about 2cm apart onto baking paper-lined oven trays. Bake in a moderately hot oven for about 10 minutes or until browned. Transfer to a wire rack to cool.
    Suitable to freeze.
    Not suitable to microwave.

    Cook's Note: To prevent cookies spreading, don't over-beat. If the mixture is soft and the cookies spread, refrigerate or freeze for a few minutes before baking.
