    Yield: 6 dozen cookies

    List of Ingredients




    2 1/4 c. unbleached all-purpose flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
    2 large ripe bananas
    2 tsp banana extract/vanilla extract
    1 c. vegetable shortening
    1/2 c. granulated sugar
    1/2 c. firmly packed light brown sugar
    2 lg. eggs
    1 c. semi-sweet chocolate ships
    1 c. coarsely chopped almonds

    Recipe



    Preheat oven to 400F

    Sift together flour, baking powder, baking soda and salt. Set aside.

    Mash bananas with extract. Set aside.

    Beat shortening and sugars at medium speed, until light and fluffy, then blend in mashed bananas. Add eggs one at a time, beating well after each addition.

    At low speed, blend flour mixture, then fold in chips and nuts.

    Drop dough by heaping teaspoonfuls about 1 1/2 inches apart onto ungreased baking sheets. Bake until cookies are golden brown, about 12 minutes. Remove to racks to cool.
