I Can't Believe It's Not Butter! ®

1-1/2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup I Can't Believe It's Not Butter!® Spread
2/3 cup PLUS 1/4 cup sugar
1 egg
1 tsp. vanilla extract
Recipe
Preheat oven to 350°. Grease baking sheets; set aside.
In medium bowl, combine flour, baking powder and salt; set aside.
In large bowl, with electric mixer, beat I Can't Believe It's Not Butter!® Spread and 2/3 cup sugar until light and fluffy, about 5 minutes. Beat in egg and vanilla, scraping sides occasionally. Beat in flour mixture. On prepared baking sheets, drop dough by rounded tablespoonfuls, 2 inches apart.
In small bowl, add remaining 1/4 cup sugar. Moisten flat bottom of a glass with water, then dip moistened bottom in sugar. With glass, gently flatten one cookie. Repeat with remaining cookies, dipping glass just in sugar before flattening each cookie.
Bake 9 minutes or until done. On wire rack, let stand 2 minutes; remove from sheets and cool completely.
Makes: 1-1/2 dozen cookies
