List of Ingredients
1/2 cup - butter or margarine, softened
1/2 cup - shortening
3/4 cup - Domino® Granulated Sugar
2 - eggs
1 1/4 cups - mashed, cooked carrots
2 cups - all purpose flour
2 teaspoons - baking powder
1/4 teaspoon - salt
1 cup - shredded coconut
1/4 cup - pecans, finely chopped
Orange Buttercream Frosting, optional (recipe below)
Recipe
Preheat oven to 400°F. Grease cookie sheets.
Beat butter, shortening and sugar in large bowl until light and fluffy. Add eggs and carrots.
In small bowl stir together flour, baking powder and salt; gradually add to butter mixture until blended. Stir in coconut and pecans.
Drop by teaspoons, 2 inches apart onto prepared cookie sheet. Bake 10-12 minutes or until firm; cool. Frost with Orange Buttercream Frosting.
Makes about 5 dozen cookies.
Orange Buttercream Frosting: I n medium mixing bowl, blend 1 tablespoon softened butter or margarine, 2 cups Domino® Confectioners Sugar, 1 1/2 teaspoons orange juice and 2 teaspoons grated orange rind until smooth
