Chocolate Marshmallow Bombs

1 stick butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups flour
1/3 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
6 ounces semisweet mini chocolate chips (1 cup)
1/2 cup miniature marshmallows, frozen



Recipe



Preheat oven to 375°. In a large bowl, beat butter and sugar with an electric mixer on medium speed until creamy. Beat in egg and vanilla. Add flour mixed with cocoa, baking soda, and salt and beat until blended. Stir in chocolate chips. Shape dough into 1" balls around a few marshmallows, pinching ends of dough to enclose marshmallows completely. Place 1 inch apart on ungreased cookie sheets. Bake 12-15 minutes, until set. Let stand 2 minutes, then remove to a rack and let cool completely.
