    1 1/4 cups butter, softened
    3/4 cup packed brown sugar
    1/2 cup white sugar
    1 egg
    1 teaspoon vanilla extract
    1 1/2 cups all-purpose flour
    1 teaspoon baking soda
    2 1/2 cups rolled oats
    3/4 cup flaked coconut
    1 cup white chocolate chips

    1 Preheat oven to 350 degrees F (175 degrees C).
    2 In a medium bowl, cream together butter, brown sugar, and white sugar. Mix in the egg and vanilla. Combine flour and baking soda; blend into creamed mixture. Stir in the rolled oats, coconut, and white chocolate chips. Drop dough by rounded tablespoons onto ungreased cookie sheets.
    3 Bake for 10 to 12 minutes in preheated oven, or until lightly browned. Cool on wire racks.


    Makes 24 servings
