    1 cup granulated sugar

    1 tsp instant coffee granules

    1/8 tsp salt

    4 egg whites, at room temperature

    1/2 tsp vanilla extract

    In bowl of food processor, blend sugar, coffee and salt until coffee granules are powdery.

    In large bowl, using electric mixer at high speed, beat egg whites until soft peaks form. While mixer is running, add sugar mixture 1 heaping tablespoon at a time and beat until very stiff. Blend in vanilla.

    Drop heaping tablespoons of meringue on to 2 baking sheets lined with parchment paper. Bake near centre of preheated 250F oven 20 minutes. Switch racks. Bake 25 minutes, until dry but not dark.

    Makes about 24.
