1 1/2 cup quick cooking rolled oats
1 cup quick cooking rolled oats, ground in the blender to a flour-like consistancy
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp table salt
3/4 cup unsweetened applesauce
1/3 cup McNeil Nutritionals SPLENDA (R) No Calorie Sweetener
1 item egg
1 items egg white(s)
1 tsp imitation vanilla extract, alcohol
1 tsp ground cinnamon
1 medium carrot, grated
1/2 cup canned crushed pineapple in juice
Recipe
Preheat oven to 350. Put the oats, ground oats, baking soda, baking powder, salt, splenda and cinnamon in a medium bowl, mix thouroughly, and set aside. In another bowl combine the applesauce, egg, egg white and vanilla. combine wet and dry ingredients and mix until just combined. Add grated carrot and pineapple and mix until evenly blended. Line a baking sheet with parchment paper and spray lightly with cooking spray. Scoop batter in 1/4 to 1/3 cupfuls ontil baking sheet and bake for about 15 min, until the edges turn light brown.
