Double Choc-Oatmeal-Peanut Butter Cookie

1-1/4 cups packed brown sugar
1 cup granulated sugar
1/2 cup butter
3 eggs
3/4 cup peanut butter
1 teaspoon vanilla
2 teaspoons baking soda
4 -1/2 cups quick-cooking rolled oats
1/2 cup chopped nuts
1/2 cup candy-coated milk-chocolate pieces
1/4 cup semisweet chocolate pieces
1 recipe Mint-Chocolate Drizzle and/or Candy Coating Drizzle (see recipe below)
Recipe
In a large bowl, beat brown sugar, granulated sugar, and butter with electric mixer until well combined.
Add eggs; beat well. Beat in peanut butter and vanilla until well combined. Beat in baking soda. By hand, stir in rolled oats, nuts, milk-chocolate pieces, and semisweet chocolate pieces.
Using 1/4 cup of dough for each cookie, drop cookies 3 inches apart onto ungreased cookie sheets. Flatten cookies slightly. Bake in a 350 degree F oven for 13 to 15 minutes or until edges are firm. Let cool on cookie sheets for 1 minute. Transfer cookies to wire racks; let them cool completely.
Decorate with Mint-Chocolate Drizzle and/or Candy Coating Drizzle. Makes 24 cookies.
Mint-Chocolate Drizzle: In a small saucepan, melt together 1/2 cup mint-flavored semisweet chocolate pieces and 1 teaspoon shortening.
Candy Coating Drizzle: Melt 4 ounces vanilla-flavored candy coating.
