    Florentines

    Source of Recipe

    Western Star E-meals Issue 106

    List of Ingredients

    ¼ Cup Plain Flour
    2 Tbsp Walnuts, finely chopped
    2 Tbsp Flaked Almonds
2 Tbsp Glace Cherries, finely chopped
2 Tbsp Mixed Fruit Peel, finely chopped
    75g Western Star Butter
    ¼ Cup Soft Brown Sugar
    180g White Chocolate Melts

    Recipe

Preheat the oven to 180C. Line a large biscuit tray with baking paper.

In a large bowl, sift the flour, and add the walnuts, almonds, cherries and mixed peel and stir to combine, leaving a well in the centre.

In a small pan over medium heat, melt the butter with the sugar until it has dissolved and melted. Add this mixture to the dry ingredients. Do not overbeat, just mix well to combine.

Place heaped teaspoonful mixture onto the tray, leaving enough space between each for spreading. Press them down to form 5cm rounds. Place in the oven for 7 minutes.
Once they have cooked, remove from the oven, and again flatten them out even further, making nice even rounds. Cool on the tray for 5 minutes before removing to cool completely.

Melt the chocolate as per packet instructions, and using a flat knife or spatula, spread the chocolate on the underside of each Florentine and leave to set chocolate side up.

Serve with coffee or tea after dinner, and store in an airtight container.
