    Ginger Bars
    2 cups all-purpose flour
    1/2 teaspoon ground ginger
    1/2 teaspoon ground cinnamon
    1/2 teaspoon baking soda
    1/8 teaspoon salt
    1/2 cup raisins
    3/4 cup butter or margarine (1 1/2 sticks), softened
    3/4 cup packed dark brown sugar
    1/2 cup dark molasses
    1 large egg
    2 tablespoons grated peeled fresh ginger


    Orange Glaze
    1 orange
    1 1/2 cups confectioners' sugar, sifted
    2 tablespoons butter or margarine, melted
    1 teaspoon vanilla extract
    1/8 teaspoon salt

    Recipe



    1. Prepare Ginger Bars: Preheat oven to 350 degrees F. Grease 13" by 9" metal baking pan.

    2. On waxed paper, combine flour, ground ginger, cinnamon, baking soda, and salt; mix in raisins.

    3. In large bowl, with mixer at medium speed, beat butter, sugar, and molasses 2 minutes or until light and fluffy. Beat in egg and fresh ginger until well combined. Reduce speed to low and beat in flour mixture just until blended.

    4. Spread batter in prepared pan. Bake 25 minutes or until toothpick inserted in center comes out clean. Transfer pan to wire rack.

    5. Meanwhile, prepare Orange Glaze: From orange, grate 1/2 teaspoon peel and squeeze 2 tablespoons juice. In medium bowl, with wire whisk, mix orange peel and juice with sugar, butter, vanilla, and salt until smooth. Spread glaze over hot bars. Cool in pan on wire rack.

    6. When cool, cut lengthwise into 8 strips, then cut each strip crosswise into 4 bars.
