    King Arthur's Favorite Choc Chip Cookies

    1 cup butter-flavored shortening
    1 cup brown sugar, packed
    1/2 cup granulated sugar
    2 eggs
    2 teaspoons vanilla
    2 1/4 cups King Arthur 100% White Whole Wheat or Unbleached All-Purpose Flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 cup chopped, toasted pecans*
    2 cups (12 ounces) chocolate chips

    Recipe



    To toast pecans, spread in a single layer on a baking sheet, and bake in a preheated 350°F oven for 6 to 9 minutes, or until they smell "toasty" and they're lightly browned.

    In a large bowl, cream together the shortening, sugars, eggs and vanilla. Add the flour, baking soda and salt; stir to combine thoroughly. Mix in the nuts and chocolate chips.

    Drop the dough by tablespoonfuls onto lightly greased or parchment-lined baking sheets. Bake the cookies in a preheated 375°F oven for 8 to 10 minutes for chewy cookies, 11 to 13 minutes for crisp. Remove the cookies from the oven, and cool completely on a wire rack. Yield: 4 1/2 dozen cookies.
