Lemon Glazed Ricotta Cookies

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 stick butter, softened
3/4 cup Equal Sugar Lite for baking
1 egg
1 teaspoon vanilla
1 cup part-skim ricotta cheese
1/2 cup confectioners' sugar
1 1/2 tablespoons lemon juice
1 teaspoon lemon zest
Colored sprinkles, optional
Recipe
Whisk together flour, baking powder, baking soda and salt. Set aside.
Beat butter and Equal Sugar Lite on medium speed in a large bowl until well combined. Beat in egg, vanilla and ricotta until well blended.
Stir in flour mixture. Cover and refrigerate overnight.
Heat oven to 350°. Lightly coat 2 baking sheets with nonstick cooking spray.
Shape dough by level tablespoons into balls. Place at least 1 inch apart on prepared baking sheets.
Bake at 350° for 12 minutes or until bottoms are lightly browned. Transfer cookies to cooling rack to cool slightly.
While cookies are baking prepare glaze. Stir together confectioners sugar, lemon glaze and zest until a good glazing consistency.
Drizzle glaze over cookies. Garnish with sprinkles if desired. Let stand until hardened.
