    1 cup packed canned pumpkin
    2 egg whites, well beaten
    ¾ cup packed brown sugar
    ¾ cup Whole wheat flour
    ¾ cup unbleached flour
    1 teaspoon baking soda
    1 ½ teaspoons ground cinnamon
    ¼ teaspoon nutmeg
    ¼ teaspoon ground cloves
    2 ½ cups rolled oats
    2/3 cup dried cranberries, unsweetened {1 ½ cups fresh cranberries}

    Preheat oven at 350° degrees F. Coat a cookie sheet with nonstick cooking spray and set aside. In a large bowl combine the pumpkin and egg whites. In another mixing bowl combine the remaining dry ingredients -sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and cranberries. Gently mix the dry ingredients into the wet ingredients until well moistened. Drop by tablespoonfuls onto prepared baking sheet, 2" apart. Bake for 15 minutes or until cookies seem firm. Store any leftover cookies in the refrigerator. Makes 48 servings
