    Peanut Butter Chocolate Chip Meringues

    2 large egg whites
    1/2 teaspoon vanilla
    1/8 teaspoon cream of tartar
    pinch of salt
    2/3 cup sugar
    6 tablespoons creamy peanut butter -- at room temperature
    3 tablespoons miniature chocolate chips

    Recipe



    Preheat oven to 300°. In a mixing bowl beat the egg whites with the vanilla, cream of tartar, and salt until they form soft peaks. Little by little, beat in the sugar. When it has all been incorporated, continue beating just until the whites form stiff and shiny -but not dry- peaks. Gently fold in the peanut butter and chocolate chips just until combined. Drop the mixture in generous teaspoonsful about 1 1/2" apart onto a greased cookie sheet. Bake until lightly browned, about 25 minutes. With a spatula, immediately remove the meringues from the cookie sheet onto a wire rack to cool. Store in an airtight container
