    Refrigerator Spice Cookies

    Source of Recipe

    McCormick

    Recipe Introduction

Refrigerator cookies are easy to slice and bake as many as you want for a fresh-baked aroma and taste. Cinnamon, nutmeg and vanilla combine with pecans to supply the great taste. This recipe first appeared in The McCormick Spices of the World Cookbook.

    List of Ingredients

    1/2 cup butter
1 cup dark brown sugar, firmly packed
    1 egg
1 teaspoon McCormick® Pure Vanilla Extract
    2 1/4 cups sifted all-purpose flour
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon McCormick® Ground Cinnamon
    1/2 teaspoon McCormick® Ground Nutmeg
    1 cup pecans, finely chopped

    Recipe

    1. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.

    2. Sift flour again with baking soda, salt, cinnamon, and nutmeg. Stir into butter-sugar mixture. Add pecans. Mix well.

    3. Shape into two logs, about 1 1/2 inches in diameter, then wrap and chill at least 2 hours or overnight. Slice into thin slices and bake on greased baking sheet in a 350°F oven 8-10 minutes.
