    Almonds Are In!

    List of Ingredients




    ½ cup plus 1 Tbs. butter or margarine, softened
    1 cup flour
    1/3 cup cornstarch
    1/3 cup ground almonds
    ¼ cup sugar
    1 tsp. vanilla
    2 oz. semi-sweet chocolate squares
    About ¼ cup finely chopped blanched almonds

    Beat ½ cup butter with flour, cornstarch, ground almonds, sugar and vanilla to make dough. Divide into 4 equal parts. Pinch and press each part into a 12-inch rope. Gently roll on working surface to smooth out and remove all cracks and wrinkles. Cut each rope into 2-inch lengths. Place lengths on cookie sheet and bake at 350°F for 18-20 minutes, or until golden on bottoms. Cool on wire racks. Melt chocolate with remaining 1 Tbs. butter in saucepan over low heat, stirring occasionally. Dip half of each cookie into chocolate, then into chopped almonds. Place on wire rack. Let stand until chocolate is set.
