    125g butter
    40g (¼ cup) icing sugar
    ¼ cup grated carrot, firmly packed
    185g (1¼ cups) plain flour
    ½ teaspoon cinnamon
    teaspoon mixed spice
    75g (1/3 cup) caster sugar
    ½ teaspoon mixed spice, extra

    Lightly grease oven trays. Cream butter and icing sugar in small bowl with electric mixer until fluffy. Stir in carrot, sifted flour, cinnamon and spice. Roll rounded teaspoons of mixture into balls; toss in combined sugar and extra spice. Place on prepared trays, flatten gently with a fork, bake at 180°C for about 20 minutes or until lightly browned; cool on trays for 5 minutes only, place cookies on a wire rack to cool completely.
