Whole Wheat Ginger Snaps

Helpful hints: I find if I add a little water and mix with my hands the cookies turn out moister and are easier to deal with. I up the amount of ginger to our taste. A triple recipe yields about 4 1/2 dozen. Also, these freeze very well and can be eaten directly out of the freeze
List of Ingredients
1 1/3 c whole wheat pastry flour
1/4 c sugar
3/4 t baking soda
1/2 t ginger
1/4 c molasses
3 T frozen OJ concentrate, thawedRecipe
Combine flour, sugar, soda and ginger.
Stir to mix well.
Stir in molasses and OJ.
Coat baking sheet with nonstick cooking spray.
Roll dough into 1 inch balls and place on sheet.
Flatten cookies to 1/4 inch with the bottom of a glass dipped in sugar
Bake at 300 degrees for 12 minutes or until lightly browned.
Cool for 1 minute.
Transfer to wire racks to cool completely. .
