125g ground almonds
½ cup castor sugar
1 small egg white
35 whole blanched almonds
2 tbs icing sugar Recipe
Line 2 baking trays with baking paper. Combine the ground almonds with the castor sugar in a medium bowl.
Whisk the egg white until frothy, then add enough of the egg white to the almond mixture to form a stiff dough, suitable for piping. Spoon the dough into a piping bag with a large star-shaped nozzle.
Pipe 35 biscuits onto the baking trays. Press an almond into the centre of each. Sift over 1 tbs of icing sugar and leave the biscuits uncovered for 3 hours.
Preheat the oven to 150°C. Bake the biscuits for 25 minutes or until golden. Cool on wire racks, then sift over the remaining icing sugar
