2 eggs
2/3 cup castor sugar
1 cup plain flour
½ cup self-raising flour
½ cup cocoa powder
¼ cup shelled, unsalted pistachios
Recipe
Preheat the oven to 180°C. Line a baking tray with baking paper. Place the eggs and sugar into a large mixing bowl and beat with electric beaters until thick, pale and foamy.
Sift together the flour and cocoa and add to the egg mixture with the pistachios. Mix to a soft dough.
Gather the dough together with your hands and knead briefly andlightly until smooth. Shape into a thick log 25cm long and place ontothe baking tray. Flatten out with your fingertips to 2cm thick. Bake for 30 minutes. Cool completely.
Preheat the oven to 150°C. Cut the loaf on a slight diagonal into 1.5cm slices. Place on two baking trays and bake for 20 minutes, turning over halfway through cooking, until almost dried out. Transfer to wire racks to cool. Serve with coffee or tea for dunking
