50g butter
50g caster sugar
3 x 15ml spoons clear honey
2 medium eggs, beaten
2 x 227g cartons curd cheese
grated rind and juice of ½ lemon
142ml carton soured cream
2 x 5ml spoons cornflour
5ml spoons vanilla essence
50g sultanas
Base
50g butter
15ml spoon golden syrup
125g ginger thin biscuits, crushed
Decoration
142ml carton double cream, whipped
slices of fruit, e.g. kiwi
Recipe
Grease the base and sides of a 1.5 litre microwave loaf dish and line with clingfilm.
Beat together the butter, sugar and honey, then gradually add the eggs. Beat in the cheese, lemon rind and juice, soured cream, cornflour and vanilla essence and mix until smooth. Fold in the sultanas.
Spoon into the prepared dish, cover with clingfilm and cook on DEFROST for 20 minutes. Remove the cover.
Place the butter and syrup in a bowl and microwave on HIGH for 1 minute. Stir in the biscuit crumbs, then spoon on top of the cheesecake, pressing down gently. Leave to cool, then chill until required.
Invert the cake onto a serving plate and remove the clingfilm. Decorate with the cream and fruit.
