Festive Cheesecake

250g digestive biscuits, crushed
75g butter, melted
500g tub mascarpone
200ml carton Sainsbury's Grand Marnier cream
grated zest of 2 oranges
50g icing sugar, sifted
75g pack dried, sweetened cranberries
600g jar mandarines with Grand Marnier liqueur
Recipe
Mix together the biscuit crumbs and melted butter and press into the base of a 20cm loose-bottomed cake tin. Chill in the fridge while preparing the filling.
Place the mascarpone, Grand Marnier cream, half the orange zest, icing sugar and half the cranberries into a large mixing bowl, and beat together until the mixture is thick and well blended.
Spoon the mixture on top of the biscuit base and smooth the top. Chill in the fridge for at least one hour.
Pour the juice from the jar of mandarines into a small saucepan and simmer gently until thick and syrupy. Allow to cool.
Release the cheesecake on to a serving plate and top with the mandarines. Sprinkle over the remaining cranberries, spoon over the mandarine syrup and decorate with the remaining orange zest
