Organic Orange Cheesecake w Dates

250g pack organic ginger biscuits
75g organic butter, melted
zest and juice of 2 organic oranges
75g organic sugar
2 x 150g packets organic cream cheese
2 drops vanilla extract
284ml carton organic cream, lightly whipped
2 x 180g packs organic Mejdool dates
75g sugar
Recipe
For the base, crush the biscuits and mix in the butter, use to line a 25cm loose-bottomed cake tin, chill for 30 minutes.
Meanwhile, mix the zest and juice of 1 orange with the sugar, cream cheese and vanilla extract, until smooth. Fold in the cream and pour into the prepared tin, smooth the top and refrigerate for at least 4 hours.
Split the dates in half and remove the stone. Place in a small saucepan with the remaining juice and zest of orange and sugar.
Heat slowly until the sugar dissolves, then increase the heat until the liquid reduces and becomes syrupy. Allow to cool.
Turn the cheesecake out of the tin and serve with the dates
