    List of Ingredients




    1 1/2 cups vanilla wafer crumbs (about 45 wafers)
    1/4 cup margarine or butter, melted
    3 (8-ounce) packages cream cheese, softened
    1 (14-ounce) can EAGLE BRAND®® Sweetened Condensed Milk (NOT evaporated milk)
    1/4 cup frozen pineapple juice concentrate, thawed
    3 eggs
    Prepared pineapple topping

    Pineapple Topping: Combine 1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk), 1 (8-ounce) can crushed pineapple - well drained, and 1/2 cup toasted coconut.
    Preheat oven to 300°. Combine crumbs and margarine; press firmly on bottom of 9-inch spring form pan. In large mixer bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND® until smooth. Add juice concentrate and eggs; mix well. Pour into prepared pan. Bake 55 to 60 minutes or until center is set. Cool. Chill. Serve with pineapple topping. Refrigerate leftovers.
