Apple and Pear Ginger Trifle

2 medium cooking apples, peeled, cored and sliced
2 medium pears, peeled, cored and sliced
8 x 15ml spoons cider
50g soft light brown sugar
½ x 5ml spoon ground ginger
6 slices ginger cake, cut in half
142ml whipping cream
4 x 5ml spoons icing sugar, sifted
2 x 15ml spoons chopped nuts, toasted
Recipe
Place the apples and pears in a saucepan with the cider, brown sugar and ginger. Cook gently until the fruit is just tender. Leave to cool.
Arrange the cake in 4 individual glass serving dishes and spoon the fruit and cooking liquid over the top.
Lightly whip the cream and fold in the icing sugar. Spoon over the fruit and sprinkle with the nuts. Serve chilled.
