Biscotti
2tbsp marsala
2 eggs, separated
50g castor sugar
Zest of 1 lemon
250ml thickened cream
Recipe
Break your biscotti into pieces and place in the bottom of 4 cups/glasses.
Divide the marsala evenly over each.
Whisk yolks and castor sugar until pale and thick, then add your zest.
Separately whisk eggwhites until stiff, then add to mixture.
Whip the cream and add to mixture.
Spoon the mixture into your cups and chill in the freezer, but do not freeze.
Serve with fresh berries dusted with icing sugar.
