    3/4 cup part skim ricotta cheese
    1 tablespoon sugar
    1 tablespoon Triple Sec liquor or 1 tablespoon orange juice
    Zest of 1 large orange, divided
    2 tablespoons mini chocolate chips
    8 French-Style ready to use 7 inch crepes (from a 4 1/2 ounce package of 10 crepes)
    1 tablespoon confectioners sugar

    Preheat oven to 350 degrees. Spray a 13 by 9 by 2 inch baking dish with cooking spray.
    In a small bowl, add the ricotta cheese, sugar, Triple Sec and 1/2 of the orange zest (about 1 tablespoon). Whisk until combined. Stir in the mini chocolate chips.
    On a flat work surface lay out 1 crepe. Spoon 2 tablespoons of the ricotta cheese mixture along 1 edge of the crepe. Roll up crepe, starting with filled edge. Place in prepared baking dish. Repeat with remaining crepes and filling.
    Bake in preheated oven for 5 minutes.
    To serve, place 2 crepes on each of 4 dessert plates. Dust with confectioners sugar and garnish with remaining orange zest. Serve immediately.
