    Chocolate and Sneaky Prune Bread Pudding

    1 tbsp chocolate and hazelnut spread
    100g (4oz) pre-soaked prunes, roughly chopped
    8 thin slices of wholemeal bread
    3 eggs
    275ml (10fl oz) semi-skimmed milk or you can use skimmed as there is more calcium in it
    75g (3oz) grated 70 per cent cocoa chocolate
    1 vanilla pod, split
    large pinch of grated nutmeg

    Preheat the oven to 180°C/350°F/gas mark 4

    Cut each slice of bread into 4 triangles. Spread the bread on one side with the chocolate and hazelnut spread. Arrange the bread in layers in a 570ml (1 pint) pie dish. Sprinkle the chopped prunes in between each layer (sneaking them in).

    Heat the milk up in a saucepan with the vanilla pod, and add the chocolate. Whisk it in but don't boil. In a bowl, beat the eggs and then pour the flavoured milk in. Remove the vanilla pod. Whisk well. Pour all this over the bread and leave to soak for 1 hour.

    Sprinkle the top of the pudding with the nutmeg and bake in the oven for 30-40 minutes, until well risen. Serve immediately with some good quality vanilla ice cream.
