    6 egg whites
    185g butter, melted
    1 cup (125g) almond meal (ground almonds)
    1½ cups (240g) icing sugar mixture
    ½ cup (75g) plain flour
    1½ tablespoons fresh ground coffee
    icing sugar or cinnamon sugar, for dusting

    Recipe



    Preheat the oven to moderately hot (200°C/180°C fan-forced). Grease 12 oval friand pans (½-cup/125ml capacity). Place on an oven tray.

    Place egg whites in a medium bowl; whisk lightly until combined. Add the butter, almond meal, sifted icing sugar, sifted flour, then the coffee. Stir until combined. Divide mixture among prepared pans.

    Bake in a moderately hot oven for about 20 minutes. Turn onto wire racks to cool, right way up.

    Serve dusted with a little extra sifted icing sugar or cinnamon sugar, if desired.

    Suitable to freeze.
    Butter suitable to microwave.
