Recipe
For French Toast:
WHISK together the eggs, evaporated milk, butter, sugar, cinnamon, vanilla, and salt in a medium bowl. Slice 8 pieces of bread one inch thick on the diagonal to 6-inch lengths. Place the bread in a flat-bottomed shallow dish. Pour the egg mixture over the bread and turn the bread to evenly coat with the mixture. Let soak for 2 minutes.
MELT butter in a large non-stick skillet over medium heat. Add four slices of the bread and cook on each side until golden, about 2 minutes per side. Repeat with the remaining bread.
PLACE two slices each on 4 warm plates. Spoon the Berries with Cinnamon Vanilla Sauce or Berries with Pure Maple Syrup on top of the slices. As desired, sprinkle with powdered sugar, scoop of ice cream or top with whipped cream. Serve immediately.
For Fresh Berries with Cinnamon Vanilla Sauce:
COMBINE sugar, cornstarch and cinnamon sticks in medium saucepan. Gradually stir in evaporated milk. Cook over medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens. Remove from heat and remove cinnamon sticks; stir in vanilla extract.
ARRANGE fresh berries on slices. Top with Sauce. Sprinkle with cinnamon, if desired. Serve immediately.
For Fresh Berries with Pure Maple Syrup:
PLACE berries, granulated sugar and maple syrup in a small pan and gently heat over medium-low heat, stirring occasionally until the berries soften and let go of their juice.
POUR hot berry syrup on top of the slices. As desired, sprinkle with powdered sugar, scoop of ice cream or top with whipped cream. Serve immediately.
