Key Lime Parfait

List of Ingredients
1 package (8 ounces) fat-free cream cheese, room temperature
1/2 cup fat free ricotta cheese
1/4 cup sugar
1/3 cup lime juice (about 2 limes)
2 teaspoons lime zest (about 1 lime)
Green food coloring
1 container (8 ounces) frozen fat-free whipped topping, thawed
4 1/2 boards (18 crackers) low-fat honey graham crackers
Lime slices for garnish
Recipe
In a medium-size bowl, add the cream cheese, ricotta cheese and sugar. Beat on medium speed until smooth. Beat in the lime juice, lime zest and a few drops of the green food coloring.
Reserve 1 cup of the whipped topping. Fold the remaining whipped topping into the cream cheese mixture.
Spoon 1/3 cup of the cream cheese and whipped topping mixture into 6 wine glasses or martini glasses. Over each glass sprinkle 2 coarsely crushed graham crackers. Spoon an additional 1/3 cup of cream cheese mixture over the crushed crackers.
Over each parfait, sprinkle 1 coarsely crushed cracker. Divide reserved whipped topping over the six parfaits. Garnish with lime slices. Chill for 1 hour before serving.
