Lemon and Ginger Pudding

200g (7oz) ginger nut biscuits
85g butter, melted
1 x 200g tub reduced-fat cream cheese
1 x 200g tin of condensed milk
grated rind of 1/2 a lemon
juice of 1 lemon
150ml (1/4 pint) whipped cream
crystalised ginger
Recipe
Crush the ginger nut biscuits and then stir in the melted butter and press into the base of a small flan dish.
Whisk the reduced-fat cream cheese with the condensed milk, mix in the grated lemon rind and lemon juice and lastly fold in the whipped cream.
Spread over base and chill.
Top with pieces of crystalised ginger
