    Mascarpone Zesty Lime Torte

    200g pack ginger biscuits, crushed
    50g butter, melted
    2 x 250g tubs mascarpone cheese
    40g icing sugar, sifted
    finely grated zest and juice of 2 limes, plus lime zest to decorate (optional)

    Recipe



    Mix together the crushed biscuits and butter. Press into the base of an 18cm spring sided, loose bottomed cake tin and chill.

    Beat together the mascarpone, icing sugar and lime zest and juice. Spread evenly over the biscuit base. Chill for 30 minutes. Decorate with lime zest if required.
