    1 ½ Cups Plain Flour
    100g Western Star Butter
    3-4 Tbsp Iced Water
    1 ½ Cups (200g) Macadamia Nuts
    ¼ Cup Brown Sugar
    2 Tbsp Light Corn Syrup
    20g Western Star Butter, melted
    1 Egg, lightly beaten
    3 Tsp finely grated Orange Zest
    Pinch Salt
    Icing sugar, for dusting

    Preheat oven to 180 C.

    Spread the nuts in a single layer on an oven tray. Bake for about 8 minuets or until lightly golden. DO NUT BURN. Set aside to cool.

    Place the flour and butter in a food processor and using the pulse action, process for 15 seconds or until fine and crumbly. Add almost all the water and process briefly until the mixture comes together, adding more water until necessary.

    Turn onto a lightly floured surface and pres together until smooth. Divide the dough into six (6) equal portions. Roll out and line six (6) 8cm flan tins. Refrigerate for 15 minutes.

    Cut sheets of greaseproof paper to fit pastry lined tins, spread dried beans or rice evenly on paper and bake for 15 minutes in the oven. Remove from the oven, discard the paper and beans, then return to the oven and bake for another 10 minutes or until pastry is lightly golden brown. Cool completely.

    Divide the nuts equally between each pastry shell. In a mixing bowl, whisk together the sugar, syrup, melted butter, egg, rind and salt, then pour evenly over the nuts. Bake for 20 minutes, until set and lightly browned.

    To serve, dust with icing sugar once cooled.
