Spring Berries w Whipped Ricotta Cream

2 cups strawberries, freshly sliced
1 cup blueberries
1 can or bottle diet soft drink
1 Tbsp mint leaves, fresh, chopped
1/2 cup fat-free ricotta cheese
2 1/2 tsp lemon zest
2 Tbsp fat-free sour cream
Recipe
Toss strawberries, blueberries, 2 tablespoons of soda and mint together in a bowl; set aside for 10 minutes. Spoon into 4 serving bowls.
Meanwhile, combine ricotta, remaining 2 tablespoons of soda and lemon zest in a bowl. Whip with a hand-held mixer until light; stir in sour cream. Divide ricotta cream over each serving. Yields about 3/4 cup of berries and 1/3 cup cream per serving.
