cranberry, date & walnut trifle

List of Ingredients
1 bag (12 ounces) cranberries (thawed if frozen)
1 cup pitted dates (6 ounces), halved lengthwise
1 cup honey
1 cinnamon stick
1 star anise
1 cup heavy cream
½ cup crème fraîche
1/3 cup confectioners' sugar, sifted
1 cup toasted walnut pieces (4 ounces), coarsely chopped
Recipe
1. In a 3-quart saucepan, combine the cranberries, dates, honey, cinnamon, and star anise with 1 cup water. Bring to a boil over high heat; reduce heat, and simmer until the cranberries have popped and the mixture is slightly thickened, about 10 minutes. Cool, cover, and chill, at least 4 hours or up to 3 days.
2. Remove cinnamon stick and star anise.
3. With an electric mixer, whip the cream and the crème fraîche in a bowl until soft peaks form; add the sugar, and whip just until stiff, about 1 minute more.
4. In a trifle dish or a 1-quart glass bowl (or 6 individual juice glasses), layer one-third of the cranberry mixture on the bottom with one-third of the cream mixture, then one third of the walnuts. Repeat layering two more times. Serve chilled.
