    Eight 6- to 7-in. flour tortillas (fajita size)
    Nonstick spray
    1 can (16 oz) spicy fat-free refried beans
    1 fully cooked
    chorizo sausage (3 oz), chopped
    1 cup (4 oz) shredded 4-cheese Mexican blend (Monterey Jack, Cheddar, queso quesadilla and asadero cheeses) or other cheese

    Accompaniments:
    Shredded iceberg or Romaine lettuce, diced tomato and avocado, chopped red onion, reduced-fat sour cream, red and/or green salsa.

    1. Position racks to divide oven in thirds. Turn oven to 500°F. Have 2 baking sheets ready.

    2. Lightly coat tortillas with nonstick spray. Arrange in 1 layer on ungreased baking sheets. Place in oven. (It won’t have reached 500°F yet, but that’s OK.) Bake 7 to 9 minutes, turning over once, until lightly toasted and crisp.

    3. Meanwhile mix beans and chorizo. Spread evenly on each tortilla; sprinkle each with 2 Tbsp cheese. Top 4 tortillas with remaining 4 to make 4 stacks.

    4. Bake 2 minutes to melt cheese. Set out accompaniments for diners to top stacks.
