8-Minute Scallop Sauté

2 tablespoons butter or margarine
1/2 teaspoon minced garlic
1 pound sea, bay or calico scallops
2 cups coarsely chopped ripe tomatoes
1/4 teaspoon salt
2 tablespoons chopped parsleyRecipe
1. Melt 1 tablespoon of the butter in a medium-size skillet. Add garlic and cook over low heat 1 minute.
2. Stir in scallops, tomatoes and salt. Cover and cook 2 to 4 minutes, stirring once or twice, until scallops are opaque at centers. Stir in remaining butter.
3. Remove from heat and stir in parsley.
