Baked Trout w/ White Wine & Fresh Herbs

Here's a very healthy and simple dish to serve with boiled potatoes and vegetables. Salmon may be used instead of trout
List of Ingredients
4 6-oz/175g skinned fillet of rainbow trout
4 tbsp dry white wine
2 tsp lemon juice
4 tsp olive oil
1 chopped tsp fresh parsley
1 chopped tsp fresh chives
1 chopped tsp fresh dill
1 chopped tsp fresh basil
Recipe
1. Preheat the oven to 375°F/190°C/Gas Mark 5.
2. Place the fish in a lightly oiled ovenproof dish.
3. Add white wine and lemon juice.
4. Bake for 15-20 minutes.
5. Remove fish, retaining juices.
6. Stir olive oil and herbs into the juices. Serves 4.
