Basil Halibut Steaks

List of Ingredients
• 4 6-ounce fresh or frozen halibut steaks, cut 1 inch thick
• 1 medium onion, chopped
• 1 clove garlic, minced
• 2 tablespoons olive oil
• 2 to 3 cups chopped, peeled tomatoes
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 cup snipped fresh basil
• 1 tablespoon butter or margarine, melted
Recipe
1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. If necessary, cut fish into 4 serving-size pieces. Set aside. In a medium skillet cook onion and garlic in hot oil until tender. Stir in tomatoes, salt, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, for 15 minutes. Stir in 2 tablespoons of the basil.
2. Meanwhile, combine melted butter and remaining 2 tablespoons basil; brush over one side of the fish steaks.
3. Grill fish, brushed side up, on the lightly greased rack of an uncovered grill directly over medium coals for 5 minutes. Turn fish; grill 3 to 7 minutes more or until fish flakes easily when tested with a fork. (Or place fish, brushed side up, on the greased unheated rack of a broiler pan. Broil 4 inches from heat for 8 to 12 minutes or until fish flakes easily when tested with fork, turning once.)
4. Season fish to taste with additional salt and pepper. Serve with tomato mixture. Makes 4 servings.
