    Lemon-Mint Sauce with Shrimp

    1 red bell pepper, cut in narrow strips
    3/4 lb cooked large shrimp
    3/4 lb baby spinach, tough stems removed (11 cups packed leaves)
    1/2 cup chopped fresh mint leaves
    1/4 cup fresh lemon juice (see Tip)
    2 tsp grated lemon peel
    3 Tbsp olive oil
    3/4 tsp salt
    1/4 tsp black pepper
    1 lb spaghetti, linguine or fettuccine pasta

    Recipe



    1. Bring a large pot of lightly salted water to a brisk boil.

    2. Meanwhile mix Sauce ingredients in a large bowl.

    3. Add pasta to pot and cook as package directs. Drain pasta, add to sauce and toss to mix.

    Note:
    Adding oil to the pasta cooking water does nothing to keep pasta from sticking together. The oil only floats to the surface of the water, away from the churning pasta. When the pasta gets drained, the first thing lost is—you guessed it—the oil.
