2 tbsp. miso
3 tbsp. mirin (Japanese seasoning wine)
2 - salmon filets (5-oz.)
1/2 tsp. canola oil
1 - bunch scallions, ends trimmed
Recipe
1 Combine miso and mirin in a small bowl. Rub the paste on both sides of salmon.
2 Heat oil in a heavy skillet (cast iron is excellent) over medium-high heat. When hot, add scallions and cook until limp and beginning to brown. Push to one side of the skillet.
3 Add salmon and cook until done, about 3 or 4 minutes per side.
