    1 kg (2.2. Lb) salted cod
    - 3 or 4 cloves of garlic
    - 6 dl (1 pint) olive oil
    - 6 dl (1 pint) milk
    - 1 bouquet garni
    - small croutons
    - salt and pepper

    Recipe



    Soak the salt out of the salt cod for 24 hours in cold water, renewing the water 4 or 5 times.

    Cut the cod into pieces.

    Bring 3 litres (5 pints) of water flavoured with a bouquet garni to boil.

    Turn down the heat to simmer and add the pieces of cod to poach for 5 minutes.

    Drain off carefully and remove the skin and bones.

    Warm up the milk.

    Pre-heat the oven to 180° C (360° F).

    Fit the knife to the Rondo bowl and put in the garlic.
    Chop up in long pulses of the mincer (maximum speed).

    Then add the cod and oil. Mix at maximum speed for 15 to 20 seconds then pour in the milk.
    Season with pepper and salt, if necessary, and mix again, then at maximum speed for 10 seconds.

    Take out the knife then sprinkle knobs of butter over the preparation and put in the oven for 20 to 25 minutes at 180 to 200°C (360 to 400° F)."
